Recipe of Mutton galouti kebab

A palte of galouti kebab


Ingredients



  • 1/2 kg Minced meat .

For the Kebabs


  • 1.5 cup Sliced onions-fried brown and crisp in 1/2 cup ghee.
  • 1/4 cup Finely chopped coriander leaves.
  • 1 tablespoon Finely chopped green chilies.
  • 3 tablespoon Roasted gram flour.
  • 1 Egg.
  • Ghee to pan fry the kebabs.
  • Lemon juice to mash on the kebabs.



Grind together


  • 75-100 gram Chopped raw papaya.
  • Salt to taste. 
  • 1 tablespoon Chopped ginger.
  • 9 Cloves.
  • Seeds of 2 black cardamoms.
  • 2 teaspoon Poppy seeds-roasted and dry ground.
  • 5 Peppercorns.
  • 1/2 tablespoon Pieces of cinnamon.
  • 2 tablespoon Dessicated coconut-lightly roasted.
  • 2.5 Blades of mace.
  • 1 tablespoon Chopped garlic.
  • 5 Green cardamoms. 
  • 1 tablespoon Chili powder. 
  • 1/3 tablespoon Grated nutmeg.



Procedure

Marinate the minced meat in the ground ingredients for 5-6 hours and mix together the coriander leaves, green chilies, gram flour and egg.Add the meat and work at it for some time, almost kneading it like a dough. Shape mixture into round patties of desired size, and refrigerate for half an hour then heat the ghee in a heavy-based frying pan or griddle.Fry the kebabs side by side till it becomes brownish on a medium heat.Marinate the lemon juice and serve the delicious kebabs.
