Recipe of Mutton Rogan Josh

A Bowl Full of Mutton Rogan Josh


Ingredients


  • 1 kg Mutton.
  • 6 tablespoon Oil.
  • 1 cup Curd.
  • 3 Onion finely chopped.
  • 2 tablespoon Ginger paste.
  • 2 tablespoon Coriander powder.
  • 1/2 teaspoon Turmeric powder.
  • 1 teaspoon Cumin powder.
  • 1 teaspoon Black pepper corns.
  • 13 Cloves.
  • 8 Green cardamom.
  • 2 tablespoon Garlic paste.
  • 1 1/2 teaspoon Red chili powder.
  • 1 teaspoon Garam masala powder.
  • 1 teaspoon Ginger powder(Dry sonth).
  • 5 Sticks of cinnamon.
  • Few threads of mace.
  • 2 tablespoon White cream.
  • Salt to taste.
  • Chopped coriander to garnish.

Procedure


In a bowl mix mutton with curd and little salt and keep aside.Heat oil in a pan and put whole garam masala,when they start to crackle,put the chopped onions and fry till golden brown.Add ginger garlic paste and fry again for 2-3 minutes.Add all the masala powder and fry till oil comes up.Now add mutton with marinade and stir fry on a high flame for 2-3 minutes.Now add water and  little amount of salt and cook with closed lid till meat is tender and gravy is medium thick in consistency.

Keep in mind that we have already put salt while marinating the mutton,so adjust the seasoning accordingly.Now add cream and stir well and cook for another 3-4 minutes.Garnish with chopped coriander.Serve with Rice or Naan and enjoy the delicious meal.
